FermOmics is led by Giorgio Gargari at the Department of Food, Environmental and Nutritional Sciences, University of Milan.
The group integrates experimental microbiology, omics technologies and modelling to investigate fermentation, food microbiomes and complex microbial processes. Wine is the flagship system for developing transferable methods, from descriptive ecology to prediction.
